Mashed Sweet Potato Pumpkin

Serves 4-6

1kg Sweet potato pumpkin, peeled and deseeded

50g butter

freshly grated nutmeg

salt + pepper

Method

Toss pumpkin in olive oil, roast in the oven for about 40 mins until tender, then mash or purée with a little butter, freshly grated nutmeg and salt and pepper to taste.

Use instead of mashed potatoes
