AVOCADO, COCONUT AND KIWI FRUIT POPSICLES

The season is coming for cooling ideas to please all the family and i came upon this delicious idea. These are made with coconut water which is hydrating so perfect for our on-coming summer months and no added sugar or nasties.

Makes 8 popsicles

Ingredients

1 avocado, ripe

2 kiwi fruit, peeled

400ml coconut water

1 lime, zested and juiced

6 mint leaves

¼ tsp spirulina

Method

Remove the flesh from the avocado and roughly chop.

Peel the kiwifruit and roughly cut the flesh.

Place all the ingredients into a food processor or blender and blend until desired consistency.

Pour into your popsicle moulds, add a stick and freeze overnight.
