FRESH PEACH TEA

 

 

With our extreme temperatures this summer nothing beats sipping on an ice cold drink.  And nothing beats when you have made it yourself with summer delights of fresh peaches.  This will quench your thirst and tingle your taste buds.

 

Peach syrup

3-4 peaches, stones removed and cut into chunks

½ - 1 cup sugar or use honey to sweeten

1 cup water

1 tsp vanilla extract

Tea

1 ½ litres water

6 tea bags or 6 tsp loose leaf tea, traditional a black tea but you could use any

1 peach, sliced thinly to serve

Handful fresh mint leaves - to serve

Ice

Method

Place the peaches, sugar or honey, water and vanilla in a medium pot.  Bring to a gentle boil over medium heat, stir to dissolve sugar and to break up the peaches. Remove from the heat, cover and let the peaches steep for 30 minutes, this will allow the flavours to develop more.

Place a fine mesh strainer over a bowl and strain the peach pulp through.

Discard the pulp and store the peach pulp in the fridge to keep it cold.

To prepare the tea, either boil the kettle or bring the water to the boil in a pot.  Add the tea and let steep for 5 minutes. Drain the tea through a sieve and cool down in fridge.

When ready to drink simply combine the peach pulp with the cooled tea, plenty of ice and fresh mint leaves.
