BAKED TAMARILLOS

 

 

These delights may not grow on our door step but i love them and enjoy their intense flavour and colour.

 

Ingredients

Serves 6

6 large tamarillos, stems on

1 cup red wine

2 Tbsp manuka honey

2 Tbsp sugar

2 star anise

2 strips of fresh orange peel, pith removed

Method

Preheat the oven to 160C.

With the point of a sharp knife, make a small cross in the skin at the pointed end of each tamarillo.

Peel the tamarillos and place into a baking dish.

Place the red wine in a saucepan along with the honey, sugar, star anise and orange peel.  Warm through to dissolve the sugar and honey.

Pour over the tamarillos, cover loosely and bake for 10 minutes. Remove the cover, roll the tamarillos around in the liquid and continue cooking for another 20 minutes or until the fruit is tender but not mushy.  

They are delicious eaten hot or cold and will go well on your cereal or served with yoghurt or even alongside red meats.
